We prepare our Peppermint Spirits from the dried leaves and the aromatic essential oil of Mentha piperita plants which have been Certified Organically Grown. The leaves are harvested when the plants are starting to flower, are carefully shade-dried, and then promptly extracted. The essential oil is steam-distilled (solvents are never used) from the fresh (undried) flowering tops.
